I doubled the recipe, and just about doubled the cooking time in the oven. They really were as good, if not better, than any I've ever done.

150 mins for a double batch? I'm guessing,bring to boil then cook 1 lb for 75 mins. and 2 lbs for 150 mins? :huh:

Got to reading some of the other recipes on the page and one was saying they used the bean water.
I have read in many places toss out the bean soaked water as there what causes a lot of the energy for the band.
Did you drain the water or keep it in the pan?

I think it's the hot water that does the trick. That get's the internal temp really hot and with the oven it stays that way. BTW, I added more water at 45 minutes cause they were swelling big time.

I am going to give this a try real soon. I have some Christmas Ham bones that are screaming to get involved with baby lima beans.
I usually overnight soak the beans, discard the water, rince and then cook. The cook involved a low simmer, the cook is done when the clear water turns to a colored soup look, which usually takes 6 to 8 hours.
Did you season or put the meat in during the stove top stage, oven stage or after the cook was done?
