Brisket adventure...better luck next time!

So my sister always wants a Brisket on her Birthday weekend. So....I went out and bought the packer, read thirdeye & Bubba Tim, and planned my cook to be ready for dinner last night.
Got it seasoned and set aside for a couple hours. Then my sister came home to tell me she had to go to dinner with her boss, so brisket for lunch on Sunday.
The brisket sat seasoned for like 18 hours, I figured that was OK. 5pm last night I light my fire, its stable at 200 at 6:30p so I put it on. Stayed put until probably 10:30, went to check it at 11:30 and it was 300!
Closed it up a bit and went to bed. The phone rang with a heavy breather (I didn't know they still did that) at 5:30, so I went out to check, temp 175. Opened a little bit.
Went back to bed and got up at 9 to check again....325!
I think that initial spike might have been just that, and I over adjusted. Paying the price ever since. We'll see, but maybe this one wasn't meant to be.
