Ribs marinading and plans changed... Help needed

Plans changed after I put 3 racks of baby backs in a 1 1/2 cup apple juice and 1/2 cup apples cider (and spices) marinade. The ribs are in a FoodSaver package and I am wondering what I should do now. Will the meat become mushy from the apple juice/cider if left for an extended period of time?[p]Maybe I should cook them later tonight and FoodSaver the finished product? Or should I freeze the ribs?[p]Your ideas are appreciated![p]

  • BeerMike,[p]How in the world did you get the 3 racks of ribs along with 2 cups of liquid vacumed packed with the Food Saver for your marinade? I don't understand! Did you use a large container for the ribs? [p]Dave

Cook 'em and foodsaver 'em, Mike. They will turn to mush if you leave them in the marinade. I'd have a hard time telling my ribs straight off the grill from ones that have been heated out of the freezer. You don't lose a whole lot of quality, IMHO.[p]Jim

Old Dave, I cut each rack in half, put them in a custom size food saver bag, poured in the liquid and vacuum sealed.[p]BeerMike
