Friday night fish fry is a Wisconsin tradition. No need to eat out, eat in and eat well.
Fresh catfish, seasoned cornmeal, oil, cast iron skillet, egg at 400° and this is what ya get....



Very fresh fish, sweet and juicy with a crunchy coating, no bones, a little heat from the seasoning brings on a smile. Oh, a bottle of Riesling helped. :P Lip smacking good.

I prefer to deep fry...but that sure looks good...about 3 or 4 years ago you couldn'ta paid me to eat that stuff...now I'd eat it any chance I got...

When the fish is fresh and it's done right, a good fish dinner is hard to beat.

As a born Southerner, except for an occasional blacken the only way to do cat is deep fried...till today. That looks great! If you layed it on a layer of paper towels bet most folks wouldn't know the differance! :laugh:

Dump Andy's Seasoning Fish Breading in a paper bag.
Cut fish into chunks.
Soak fish in a pan of whole milk for a minute.
Drain fish from milk, about 6 pieces at a time, and dump into the bag, then shake it baby.
Remove coated fish to a large tray so pieces don't touch each other and repeat procedure until all fish is coated.
You already have the egg up around 400°, place cast iron skillet on grid to get it nice and hot. Pour in some canola oil enough to cover the surface and let it heat up for about a minute or two. Place fish in pan and cook until golden brown then turn once and continue to brown until fish reads 160 internal and your done.
Enjoy piping hot!
That's about it Molly, Andy's Seasoning is in most super markets. It's a cornmeal mix, you could make your own if you would like. Don't get the pan overheated. This is a great catfish cook and you will like it, I'm sure.

Shore Lunch is good, one style was particularly good but I don't remember the style. Gotta watch the salt, some are a bit salty.

Well,... I can't deep fry in the egg so I do the next best thing. This was how Mom cooked fish anyway, on top of the stove with a cast iron pan.
This way that I did, not swimming in oil, made the fish less greasy but still rich in flavor. -
To the Minnesota freezeggfest? Wish I could! Building two mini tables for the Florida Eggfest takes up all my free time weekends.
Looking forward to shaking your hand in warmer weather.

Steamed broccoli, baked tater and Italian olives rounded out the dinner. A little wine to drink and I'm fat and happy.
Catfish can be mild so the cornmeal breading kicks it up. :cheer: -
Nothing like a good fried catfish but I didn't know you boys from the cold country knew anything about a good southern catfish!

Thanks Pat. Try a higher heat, simulate deep fried temps without all the oil. I only used enough oil to coat the pan about 1/16 inch deep.
It's a fun cook and if you like fried fish you will like this. Maybe more. -
OK,We've always said a pone of cornbread when it is cooked in a seasoned CI skillet.I thought there may be another PONE out there!
