Quick Peach Cobbler

I want to do a peach cobbler at the last moment. Anyone got a quick peach cobbler (southern style) that they use. I use to make one with mom when I was young (a long time ago!) and it was simple like a cup of flower, a cup of sugar, a stick of butter and a can of peaches in syrup. dump it in pan and put it in oven for 425. Any idea?

    INGREDIENTS:
    1/2 Cup Butter, 1 Stick
    3/4 Cup Sugar
    3/4 Cup Flour, Self Rising
    1 Cup Milk
    1/2 Tsp Cinnamon, optional
    Fruit
    2 Cups Mangos, Fresh, Peaches or similiar fruit works great
    1/2 Cup Blueberries, Fresh
    1/2 Cup Raspberries, Fresh
    1 Cup Sugar
    1/2 Cup Water, or Syrup from canned friut
    Vanilla Ice Cream for Serving




    Procedure;
    MOST IMPORTANT DO NOT STIR THE VARIOUS LAYERS OF THE MIXTURE
    1 In a bowl; mix the fruit, 1 cup sugar and 1/2 cup water or syrup. Set aside
    2 Preheat oven to 350°F
    3 Put butter in a 13 by 9 by 2 inch baking dish and place in the oven to melt. Stir 3/4 cup sugar and flour together. Slowly add milk and continue stirring to prevent the flour from getting lumpy. If you like cinnamon, 1/2 tsp goes in next.
    4 Being VERY CAREFUL not to burn yourself, remove the hot baking dish containing melted butter from the oven; pour batter directly over butter in baking dish. DO NOT STIR.
    5 Spoon drained fruit on top of batter, then gently pour syrup on top. DO NOT STIR. The most important part of this dish is NOT STIRRING.
    6 Bake 30-45 minutes or until top is golden brown. The batter will rise above the fruit, producing a very wonderful crust. Let set for 30-45 minutes and serve with vanilla ice cream
    BGE Version:
    1 Large BGE, Indirect, 375°F, Plate setter, legs down. feet under the pan. 60-75 minutes.NO SMOKE


    Yield: 8-10 Servings

    You inspired me. I just threw a quick recipe using bisquick in the oven. Got some cold icecream to go with it.

    1 Large can peaches

    1 Cup self rising flour

    Tea sp baking powder

    1/2 to 3/4 cup sugar

    1 cup buttermilk ( i use the powdered variety mix with water)

    Stick salted butter

    Mix all but peaches and butter
    In pan or microwave melt butter pour into baking pan
    Pour batter on melted butter
    Spread peaches on batter
    Add 2 shots peach schnapps
    Cook indirect on BGE at 400-425 for aprox one hour till top is golden brown

    Make sure the egg has NO SMOKE as stated earlier by Richard

    this is the one i use and my friends love it My dad also made this one at the Ozarks eggfest last year

  • If you are pressed for time, lacking ingredients or just plain lazy, this is the perfect answer to making an excellent dessert.

    The Peach Cobbler is our favorite but all of their products are good.
