Hi
Using Indirect method....what would be best cooking temperature for a standing rib roast of pork (not beef)
And what would be the best internal meat temperature to aim for?

I am cooking one tomorrow. I will have the egg at 350 degree dome and cook it to 140-145 degrees with a 20 minute rest.

i would use the same method for doing pork as i would for beef.. but i would shoot for 145 on the temp instead of 120 for beef..
