Appetizers to go with Steaks?

This weekend we had some friends over and TRexed some nice Ribeyes. While I was waiting for the Egg Temp to drop back down to 400 from the 1200 it was at, we threw some bacon wrapped scallops and some Crab stuffed Shrimp wrapped in bacon as well. They were AWESOME! [p]Since they only took a few min to cook at the 750 or so that the Egg was dropping down to, they made great appetizers.[p]What are some other good things to cook on the egg while it is dropping from 1200 deg down to the 400 needed for the Trex method?
