Mango Lime Marinade

I came up with a great marinade this weekend. I don't have exact measurements for this, but here is what I used. About half a cup of mango concentrate (sold in Latin/Carribean markets), juice of one fresh lime, 4-5 cloves of fresh minced garlic, freshly grated ginger (probably 2-3 tbs), olive oil, salt, pepper, cayenne pepper (fresh chopped jalopenos or seranos would have been great too), brown sugar, dash of dry sherry (rice wine would probably work too). [p]I marinated a whole cut up chicken in it (stupid Giant didn't have any whole small chickens for me to spatchcock!) overnight, and grilled it direct for about 45 minutes. [p]It turned out really, really good, especially with some black beans and rice. I chopped up some of the leftover beast meat and added it to the lefover beans and rice. That should make some nice burritos later this week.[p]I think this marinade would be great for pork. I'll have to try for ribs or a tenderloin soon.
