1 ½ cups chopped onions
½ cup chopped bell pepper
1 lb. small shrimp
3 cooked baked potatoes
2 cups fresh bread crumbs
¼ cup chopped green onions
¼ cup chopped fresh parsley
2 tablespoons of chopped garlic
8 slices bacon
salt and pepper to taste[p]caramelize veggies in butter, add shrimp and cook for 10 minutes. Add green onions, parsley, and garlic. Chop potatoes and stir in along with the bread crumbs. Adjust seasonings. Put in fridge until cold. Portion out into 8 portions. Make a ball with them and wrap each with a slice of bacon, secure with pic and press down to form patty. Cook at 325° for about 50 minutes or until bacon is crisp.
