Chef Wil's Stuffed Brisket

I've been wanting to give this one a spin every since WooDoggies did his post. My butcher didn't have near the butterflying skills as Woo's, and I wish I had done it myself. But, after major surgery, I tied it up and cooked the 4 pound stuffed brisket for 11 hours.[p]Have a great Sunday-fire up the Egg, Scott [p]

Looks really good, next time put a little mac and cheese, sliced roma's, and a hunka chocolate cake, gimme a call and I'll be there. How was it? Is it a do again? Was the brisket tender and moist?

Chef Wil, I "Wil" definitely do it again. The brisket was great. I think id rather have a little bigger piece though, like 5-6 pounds.[p]Scott
