I smoked the haddock at about 200 for 2.5 hours maybe? Anyway, I used a couple of blocks of oak. They didn't turn out yellow, but like I said, I didn't do the pellicle thing. My wife says the taste and consistency was like she remembered it, but of course, it wasn't yellow. She says that there were rumours in England that they colored the fish, and she remembers the fish being yellower later in life, so maybe the conspiracy was real! Anyway, it tasted quite good. I think next time I'll do the pellicle thing and use more smaller bits of oak to make more smoke.[p]TNW
