English smoked haddock

Does anyone know what kind of wood the English use to smoke their haddock? The wife says if the fish doesn't turn yellow, it isn't the same thing.....[p]Thanks!

The Naked Whiz,[p]Somewhere I seem to remember they used peat? Or a combination of peat and some kind of wood maybe oak?
You'll get color from peat for sure.

The Naked Whiz, when I lived there, I seem to remember reading that they used dye to turn the stuff yellow. Use oak or beech.[p]Cheerio.

FWIW, I found a website that led me to believe that oak might be a good choice, so oak it is. But it ain't yeller! But then I didn't do the drying thing to raise the pellicle either. What the heck, we'll see what we end up with! thanks for the help.[p]TNW
