Grilled Pineapple Habañero Salsa

I saw this in Raichlen’s “BBQ USA” and thought it sounded interesting. Actually, it’s called “Grilled Pineapple Ginger Salsa” (pg 62) but I thought the habañero flavor was more distinct than the ginger. Needing something for a potluck, I thought I’d give it a try.[p]Wow! This is very good. The chile flavor (I used two roasted jalapeños and an unroasted habañero) was very balanced with the sweetness of the pineapple, mint, candied ginger and brown sugar. Still, it was rather spicey and I thought I’d have plenty to bring home for myself. Wrong. There wasn’t more than about a tablespoon left over!
