Put one on the mini and one on the small BGE - 400 direct on a raised grid

Frank - those look great! About a month ago our Kroger store had a big sale on Tyson Cornish game hens, which for some dumb reason we haven't had for several years. I say dumb as we slapped our foreheads when yelling WHY NOT since we love them! The first two I used these Willie's Chicken setters which made them sit right up proud like a beer butt yard bird.

Those were so good I went right back out and bought 4 more and then Pat picked up 4 more after that!
Since then I too have splatcocked 2 of them and LOVE those! Kinda like each person gets their own bird to enjoy the delicate pieces and tastes of each part of the bird.Re-gasketing the USA one yard at a time -

The sugar cane goes on the lump - sugar cane smoke

I have smelled the smoke when they are burning the leaves off the cane in south florida and hawaii. And I have used the spears as skewers for shrimp. What flavor does it give to the food on the egg?

It's much lighter than say hickory or mesquite. Smooth light smoke flavor - I keep it in the freezer and use 6-8 pieces for smoke on poultry.

Sounds great. I can get it locally, how long is a piece 2-3 inches?

I cut the cane into 6-8 inches and then split the pieces. I normally put 6-8 split pieces on the lump. When you pick some up, chop it, split it, then put it in your freezer until you are ready for it. The color on the hens came from the sugar cane. If you use a whole lot of sugar cane it will come out like this:

Looks burnt but it wasn't. In fact the skin was mightyfine. -
