is there a difference between a regular brisket and a corned beef brisket? how would one cook a 5lb corned beef brisket? thanks btw put some oysters soaked in olive oil with garlic and Tony's on one of those Wal-mart screens, dipped in garlic butter as the came off. Almost is good as a TREXed Steak!

captaincraigb,[p]Corned beef is beef brisket cured with salt and usually boiled or baked with spices in water. Beef brisket is just the plain piece of meat. I have 27 lbs of butt on right now. Can't wait for tonight.

captaincraigb,[p]I've done several corned beefs. I like them alot, but it's not quite same as a regular corned beef. I think it has great flavor! I smoke them for 5 or six hours at 235 to 250 degrees (to 180 to 185 internal temp). After cooling, it will be easier to slice. I find a meat slicer is great for deli style cold cuts, other wise a sharp knife a s steady hand will do! [p]Smokey
