How to make Great Tasting Jerk Tofu and Jerk Chicken – Something else for the Atkins Folks.
Tofu: How to make it taste great! Jerk Tofu and Jerk Chicken – Something else for the Atkins Folks.[p]I originally used this to make Jerk Chicken but I had some extra left over so I marinated Sliced Firm Tofu and WOW it came out great.[p]Ingredients:[p]For the Marinade:
2 cups finely chopped scallions (use the white and green parts)
5 Scotch Bonnet or Habanero peppers (seeds removed) (You may want to use gloves handling the peppers)
2 tablespoons soy sauce
2 tablespoons fresh lime juice
5 teaspoons ground allspice
3 teaspoons English-style dry mustard
2 bay leaves, center ribs discarded and leave crumbled
4 garlic cloves, chopped
1 tablespoon salt
1 packed tablespoon brown sugar
1-½ teaspoons dried thyme, crumbled
1 teaspoon cinnamon
2 tablespoons olive oil
2 teaspoons black pepper[p]The Main Course:
5 pounds of Firm Tofu sliced 1 ½ to 2 inches thick (drained) or 5 pounds of chicken pieces (cleaned and dried with paper towels)[p]Make the Marinade:
In a food processor or blender puree all the marinade ingredients. Let the mixture rest for a ½ hour.[p]Marinate:
Put the tofu or chicken into two or three large plastic ziplock bags. Spoon the marinade into the bags. Coat each piece well. Press out any excess air and seal the bags. Let the tofu or chicken marinate, chilled, in the refrigerator. Turn the bags several times. Marinate for at least 24 hours and up to 2 days.[p]Some people are very sensitive to the chopped up peppers so don’t stick your fingers in the marinade without gloves.[p]To Cook:
Here’s the sad part: I don’t have an EGG so I can’t tell you how to cook it. What I can tell you is how to cook it in a grill. When someone gets the time and temp. right for an EGG please update this.[p]Tofu does not need to be cooked. It is made from soybeans and can be eaten as is from the container. The only reason to cook it is to bring the flavor of the spices out and to add the great flavor that a grill adds. Just oil the grill to prevent sticking and cook for about 2 to 3 minutes or so on each side. It is done when it is slightly browned. Use a spatula and turn gently. You can also do what I do. I put a cast iron skillet on the grill and cook the tofu in that to prevent it from falling apart. It still gets that great smokey flavor but I don’t have to worry about it falling apart.[p]Enjoy[p]Todd[p][p][p][p][p][p]
