Need a pizza primer

My wife wants to try pizza on the egg, and I can't put her off any longer. I need a primer on making some real thin crust pizzas. I need a good recipe, manner to prepare it, cooking temps etc. Whatever you can provide, I'll take.[p]Thanks.

    My wife did the same thing. I just went down to the local Walmart and bought a Digorno Oven Rising Pizza. It was the best we ever had. Due to cooking conditions they will rise and almost look like a Pie when you get done. I use a platesetter or you can use a pizza stone. I followed the same instrustions that were on the box.

    cbs, just be prepared to have a few less than perfect until you perfect the process. I have come to prefer a dome temp of about 525. Time = ?? 10 - 18 minutes. Keep checking the crust/toppings until it looks right to you.[p]If you live where there are Trader Joe stores, they have pre-mixed pizza dough in the refrigerated section and I prefer their pepperoni.[p]I had not eaten pizza for 3 - 4 years but have been making it regularly on the egg. Will be making another one tonight.[p]Toy Man

    cbs, I use a package of the Kroger thin pizza crust (add one-half cup warm water, mix and let set for 5 minutes). I line a 12" pizza pan with a sheet of non-stick aluminum foil and flatten the crust to cover th epan. Use small (8 oz) can of tomato sauce with some added basil, oregano, marjoram and thyme as sauce on the dough. Put down a small layer of mazzarello (sp?) cheese and then layer it with my veggies (onions, tomatoes, peppers, brocoli, cauliflower, mushrooms, ..) and meats (pepperoni, bacon, Italian sausage, ...) and then cover with "pizza cheese" or more mazzarello. Get the BGE going to about 450-550 with the pizza stone on top of the platesetter. Position the pan directly over the pizza stone and grab a corner of the aluminum foil while pulling the pan away. Let it cook for 15 minutes or so (peek down the top vent with a flashlight to see how it's coming) and then lift up a single corner and slide the pan underneath. Be careful, that non-stick foil is truly non-stick an dif you're not careful you can slide the pie right of fthe back side. let it sit for few minutes and then slice and eat. GREAT pizza.

    cbs,[p]Check out Mr. Hyde's Pizza under the "Pizza/Breads" of my webpage. It's a very good thin crust recipe, but may take a little practice. Don't let the throwing part scare you, though. It can be done by rolling it out also, but once you're comfortable with the dough, you should give the throwing part a try...[p]Tonia
