So thought I would. My wife requested grilled chicken breast sandwiches the other night. I always kind of cringe at the mention of "chicken breasts," just because, in my opinion, they are simple yet tricky. Not a lot of flavor, and easy to overcook.[p]I started by hammering out some fresh chicken breasts to even thickness, then rubbing with Dizzy Dust and marinating in the old standard, italian salad dressing.[p][p]I then cooked these on an elevated grid at a dome temp of roughly 400 - 450 for about 20 minutes, flipping every 5 minutes. This gave me a final internal temp in the range of 160 - 165.[p][p]I topped a few with cheese and served these on whole wheat buns. They turned out juicy and flavorful.[p][p]After all of the cheese drippings, I put the Egg in self-cleaning mode, crusing at about 800 degrees. The coals were glowing so nicely and she was holding temp so well, I just had to throw something back on to take advantage of the moment. Well, I was craving something sweet, so . . . [p][p]I sliced some bananas in half, sprinkled with turbinado sugar and cinnamon, and grilled on the elevated grill for roughly 5 - 8 minutes until they were really, really soft. [p]I scraped the insides out, chopped (or mushed them up), almost making like a warm banana compote, and spooned them over a fresh bowl of Blue Bell homemade vanilla icecream. One more dash of cinnamon on top, and it doesn't get any better than this.[p][p]Another good meal, thanks to the Egg.[p]TRex[p][p]

nice pics. . .i particularly like that professional meat tenderizer you got there...never seen one of those at williams sonoma or sur-la-table.. ..do you do all your kitchen shopping at home depot? LOL
