Question for Carwash Mike or others

Mike- I am going to use your rib recipe, but I have one question. In the Eggtoberfest cookbook you mention mixing apple cider vinegar with water to allow for 5% acidity. Rookie q- How do you know your at 5%? Thanks for the time

    My bottle of apple cider vinegar says to add water until 5%, but does not tell me what % I am starting with. I usually do 2 parts vinegar to 1 part water. Have no clue. is there a chemist in the house?

    Buy White House Apple Cider Vinegar, it's already at 5%.
    You don't need to do anything to get to the specified 5%

    I like to add apple juice myself. I normally mix it more or less one to one........

    5% is the standard for pickling. Most of your store bought vinegars have already been diluted to 5%, and they just add water to get the concentration right. Yours is most likely 5%.

    Now, home made vinegars like my Granny would make can be of different strengths and they usually are stronger than 5%. Some of the oldest barbecue mops and sops come from Eastern North Carolina. They call for vinegar, water, salt and cayenne. If you follow an old recipe (100 years or older), using 5% vinegar, your mop may be too weak, again because most vinegars back then were all made at home and needed to be watered down....

    My friend,

    Does the label say reduce to 5% (like they are instructing you to do thes) or does it say reduced to 5% (letting you know they have already done this)?

    Or maybe the wording is dilute or diluted.

    Good question. The brand is Kurtz out of Save-a-Lot in missouri and says "reduced with water to a uniform pickling and table strengthg of 5% (50 grains) acidity. These ole eyes ain't what they used to be, but I still dilute for a spritz. Sometimes 1/3 each water, vinegar, apple cider or if I want sweet I will use orange juice in place of apple juice.
