    Sounds like I should run as fast as I can for the select at $2.39[p]My Costco and Sam's only carry the flats and I'm not wild about using bacon on em and the butcher's won't give any fat trimmings because they have been in the tallow barrel.[p]Gee,

    Here a couple of things you can do to cut down that hard bark. 1st try starting fat side down and once the internal
    reachs 160 foil it. Add a little apple juice to the foil package before you seal it. Keep an eye on the internal temp they will climb faster than you are use to.
