Kebab (seafood & other) ideas please

Hello,[p]I tried some 'ready made' meat kebabs a few days ago and liked the result. Does anyone have any tips and recipes for kebabs. In particular I was thinking of trying a fish one, such as tuna. Also I like the idea of having a mixture of vege/friut and meat/fish on the one stick (does that make me a flexitarian?)[p]Please if you do have any recipes to share do not use brand names for ingredients. Just generic ones since 'Dizzy' and other brands I see on this forum are not available in Australia.[p]Many thanks,

Aussie_Hugh,[p]Kebabs present a unique problem. Unless you like your meat and fish Very rare, the veggies and fruits (esp. the fruits) will be past recognition when you take them off.[p]Still, the presentation is fantastic. What I'd do is prep and skewer meat and fish, partially cook them and let them rest. Then remove meat and fish, re-skewer with fruit and veggies interspersed and finish.[p]Without knowing what kind of fruit is available... I'd start with a couple pounds of tuna cut in cubes, and a couple pounds of lamb in cubes. Marinate both in a 50/50 mix of olive oil and lime juice, a little salt and a little pepper. To the lamb, add an onion quartered and a generous "hit" of mint (dried works better than fresh). Marinate the fish for an hour maximum, and the lamb at least two hours.[p]Remove and drain. Reserve the onion quarters. Skewer the fish on one set of skewers, and the lamb on another - so you can get a good "handle" on doneness of each. Grill around 300°F and remove when the exterior is barely done.[p]When meat and fish is cool to touch, re-skewer as desired, interspersing strawberry halves, pineapple chunks, mushrooms and reserved onion. Brush with olive oil and return to hot (around 500°F) grill just until the strawberries are heated through.[p]Just what I'd do...[p]Ken
