Why not just use a plate setter???

Can anyone tell me why you need a pizza stone? Couldn't you just place the pizza on top of the plate setter???

ShortRib,[p]The plate setter alone, or a pizza stone alone, will gradually overheat from the direct exposure to the fire. Stacking two insulating masses (pizza stone/pizza stone or plate setter/pizza stone) provides a thermal break to keep the top stone from overheating.[p]Spin

Also, you can use a slightly larger pizza stone that the area you can use on the plate setter. On my large egg, I use a 16" stone. The plate setter only has about 12" of space.[p]TNW
