Chicken Calzone

<p />All the different ideas for my wacky calzone idea helped a lot, and I ended up angling toward the "chicken pot pie" route as suggested by Tonia, and the roux suggested by Wil. Well...sorta. [p]Overall I was really happy with the results, and the kids just devoured it. Wished the dough would have browned more on top, but the results were crunchy with a bit of chew to the crust. Can't imagine a better outside layer than Mr. Hyde's dough. Wow. [p]In an eggshell:
Sauteed onion garlic in a little olive oil. Added mushrooms and cooked til almost caramelized. Pushed aside in pan, and added butter. Then flour to butter to make roux. Whisked in a pint or so of homemade chicken broth and reduced. Seasoned with salt pepper basil and parsley and some ragin river. Added milk and reduced a bit more, then added broccolli and chicken, and seasoned with salt til it was right. Rolled out dough and added 1/2 cup cheese (mozzarella, garlic chedder, jack, queso blanco), then spooned in chicken mixture. Sealed "zones" and cooked at 500 til crunchy. [p]We loved it, but it gets BIG points because it was a kid pleaser......and that seems to be getting tougher and tougher.[p]Thanks again for the suggestions, and thanks to Mr. Hyde fer the dough recipe!

    Nature Boy,[p]Looks great Chris. I'll have to give it a try. I'll also have to try Mr Hyde's dough recipe. I have one I'm really happy with, adapted from FatDogs recipe, but it's always good to try something different. Looking forward to seeing you again in Waldorf.[p]Chuck

    Nature Boy,[p]To get the top a little browner, you might try brushing it with a little melted butter or olive oil....[p]Looks like it turned out well![p]Tonia

    I agree with the brushing to brown the top. I beat an egg and whip in 2 tbsp of olie oil. Brush on the dough then sprinkle with parmesan cheese or course salt. [p]I learned the above from watching an Emeril episode.[p]Banker John
