Grilled Chicken Fajitas
JB
Posts: 510
Picked up a bunch of b/s breasts on sale this weekend so was looking to use some up. Last night it was fajitas, everything done on the Egg.. well, except for tomatoes, sour cream, salsa, cheese, but you get the idea.
Marinated the chicken in lime juice, oil, salt, chili powder, cumin, garlic and honey.

450* raised direct provided a nice char on the chicken and veggies. Pulled breasts at 160 and rested before slicing.

Tortillas on at the end

Sliced up and plated, leftovers for lunch today. Tasty meal.

Looks great, JB. I hadn't thought of doing the tortillas on the Egg. I'll do that next time.__________________________________________Dripping Springs, Texas.Just west of Austintatious

Thanks Gary. The tortillas just take a few seconds per side. Fun doing it all on the Egg.

Of course, you do know what this means, don't you?
I cook my fajita meat indirectly, so I have the plate setter, drip pan, etc. in place on the Large Egg.
So, I'm going to have to go buy that Small or Medium Egg I've been looking at so that I can cook the tortillas over a direct flame.

Sounds like as good a reason as any.

Hopefully these were a small step up from Taco Bell.
Not sure about how good they are for you though, with all that sour cream and cheese I piled in there. :P -
