Looking for cook ideas that make good COLD leftovers

Hello all... trying to come up with meals that I can egg and eat all week as my lunch... has to be cold as I have no access to any type of reheating device.[p]So, besides turkey and/or chicken, & roast beef what else could be good eatin' cold?[p]Cheers, [p]Brian

    The "Rum Smoked Salmon" recipe from Raichlen's "How To Grill" book turns out better than the best store bought smoked salmon. It is great cold. You can mix it into salad, make a spread or dip, or eat on bagels w/cream cheese.[p]Jim
  • Nardi, make roast beef (from top round) - inject with a mix of soy sauce/ ginger / garlic = 1/4 cup + 3/4 up water
    slow smoke @ 225F til 145F internal temp. Let rest 30min
    cut accross the grain thin slices. freeze in individual packs & enjoy lunches for many weeks to come

    Smoked Jello might be good. Instead of boiling it on the stove, add a little extra water and then boil it uncovered for about 20 minutes on the Egg with a heavy smoke. You might want to match the Jello flavor with the wood, i.e., apple Jello with apple chunks.

    I remember a cold meatloaf sandwich when I was a kid. Purty good from what I can remember. Brisket is really good cold too. Our 9 year old twins love cold brisket sammiches. [p]Oh...one more thing. I love bulgoki but when I can't get out for the special Korean style short ribs, I will make my "bulgoki on a stick". Take a beef sirloin, cut it into thin slices and marinade in chopped scallions, soy sauce, sesame oil & seeds, a little rice wine, and sugar...maybe some oyster sauce and black pepper.....thread em onto skewers and sear til crusted. Good stuff, and amazing outta the fridge in the mornin...or in a lunchbox.[p]Have fun!
