Pulled Pork temp 195->210? How do I decide?

How do I decide to pull a pork shoulder at 195 versus 210? I have a crowd coming tonight (8pm) and here it is 3PM and it's just hit 195. I'd rather not have it sit for 5 hours, is there a downside to letting it go closer to 210? Dried out or anything?

I don't see a problem. If you gently pull on the bone and it comes away with no resistance, it is ready to be pulled. I would go to 210, remove and wrap in foil. put it in a preheated cooler with towels and hold it there till you are ready.

its done when you can slide a probe in with no resistance. you could lower the heat and let it ride another hour or so, wrap in foil and into the cooler for the rest of the time an you will be good to gofukahwee maineyou can lead a fish to water but you can not make him drink it

Boneless, so I can't test that way. Sounds like there's no harm in leaving to 210 though?

I was just thinking if you wrapped it in foil, shut the egg down and leave it in you could reduce the holding time a bit. I wouldn't let it go past 210 though.

Little Steven - So, pull it from the Egg now at 195 degrees, wrap in foil, place back on the Egg? Then pull from the Egg later (when?) and put in a pre-warmed cooler?

I think I would foil-wrap and place in cooler now. Bring Egg temp down to about 200* and put shoulder back in Egg.
It will have a tendency to dry a bit above 200*.
Just my two cents worth. -
When it reaches 210* but shut the egg down now.

When the butt is removed and wrapped, it still continues cooking. Juices get distributed, and the temperature evens out. Well wrapped in a "cooler" with some bottles of hot water, a 195 butt will still be around 160 after 5 hours.
One small plus, if removed from the Egg a little sooner, its less likely to fall to pieces when pulled of the grill. -
I would pull it at 195, if you double wrap it in foil and tuck it away in a cooler it will be fine. I don't care for the texture when they are pulled and wrapped at 205, they gets mushy. -RP

I pulled a few minutes ago at 198 degrees, wrapped and put in the pre warmed cooler with some ziplock bags of warm water. Will pull about an hour before the crowd arrives. 6.5 lbs doesn't look like enough, now I know why I see so many people smoking 3 and 4 of these things.

I think you will be happy pulling anywhere close to 200.
