Well it's sort of like building your lump for a lo-n-slo butt cook, matter of fact the same. For this cook I filled the firebox to the top, made sure the fire grate holes were clear with my wiggle rod from below and used three good sized chunks of cherry for smoke.
Frankly I was surprised it took so long, I was thinking well.....jerky take 1.5 to 2 hours, summer sausage should take around 4 hours. Good news is the med doesn't eat a lot of lump/hr on a lo-n-slo.
