Does anyone have a good halibut recipe that is "egg proven and worthy"?

  • pilgrim,[p]Well, if you have some Dizzy Pig Ragin River Rub... try the maple syrup - butter recipe. I use it for tilapia which is similar to halibut and it is great![p]Rub down fish with Ragin' River rub.... Cook filets at 400F for about 3 min per side (these are fairly thin tiliapia filets ~1/2 inch, you may need to adjust for your thickness).[p]When the fish come off the grill apply coating of 50/50 maple syrup and butter (pre melted in microwave) with some sort of brush.....[p]Damn good eating.[p]

    Nardi,
if you really wanna taste the maple/butter glaze at its best is to heat the mixture in a skillet and let it boil until syrup like texture, then drizzle it on your fish, you'll find the maple/butter flavor more intense.

    Chef Wil,
I'm with you on this!!! I do my salmon that way and I'll add a shot of burbon to the "syrup" to give it added flavor. Joe
