Hello guys and gals I have a 7lb roaster im going to spatchcock and season with whatever i can find . I am trying to find some methods to make sure it is a success. I have a xl and a plate setter . How should I approach this cook. All i have ever cooked is butts and steaks etc... no chicken .

raised grill, 350 degrees. direct heat. 7 lb. bird will take approx 1-1/2 hr. but cook to temperature.
Large egg and mini max egg plus a Blackstone griddle

If you don't have a raised grid, I like JLOCKHART29's post of how he did the indirect. Steve shows a good lookin chik too with indirect.
Either way you're gonna love that chicken.
