Roasted garlic

I've just roasted a couple of garlic bulbs to make up some roasted garlic mashed potatoes, but there'll be quite a bit left over. What's the best way to store roasted garlic? I've mashed it up into a puree with a fork - will it freeze well? Thanks for any help! Cheers :)[p]Jake

    Aussie Jake,[p]It'll freeze beautifully, whole or otherwise. But, around here, roasted garlic doesn't last very long. When it's soft and warm just off the cooker, you can spread it on crackers, it can also be added to other spreads/dips, it's excellent on pizza, meatloaf, eggs, compound butters, pastes for marinating...pretty much everything![p]Tonia
