Blackeyed Peas three ways and cabbage two ways

Lucky Bean Dip:
Blackeyed peas, black beans, corn, red onion, cilantro, feta cheese, and roasted red pepper sauce. HEB was giving samples of this away yesterday and I had to get all the ingredients - it's real good.


Cabbage enchiladas:
Cabbage, blackeyed peas, Mojo Pulled Pork, onions, lime juice, cilantro, cheese, sour cream to top


Cooked the leaves so they could be rolled


Stuffing went into a pan to mix and warm up


Stuffing on to the cabbage and rolled


Into the bottom of my Christmas present from my traveling companion 71/2 quart Le Creuset Dutch oven I must have been a good boy
Should have gotten a pic of the rolled cabbages - my bad
Covered with enchilada sauce and cheese - ready to heat up


Blackeyed pea and cabbage soup:
Blackeyd peas, cabbage, mojo pulled pork, andoille, corn, turkey stock, cilantro, onions, and tomato sauce

No fishing report yet. Put the Geaux Tiger boat in it's new home this morning.

Probably be a few weeks before it gets wet.

I have a "fish" report....for lunch we had a fish taco from one of your redfish (last one in our freezer :-( ) and it was out of this world. A little Paul's Redfish seasoning and walla....yummy....thanks, Frank!

I'm surprised I haven't seen any other New Year's Day blackeyed pea and cabbage cooks. First cook of the year always includes blackeyes and cabbage - I thought it was some kind of law or something like that.

Great looking cook as always! We had black eyed peas and cornbread for lunch (I think that is some sort of law in the South) and a big pot of Chef Paul's Seafood Gumbo for supper. I am stuffed! Should have skipped that last bowl of gumbo :blink:
