Try this one too:
Green, black or kalamata olives (a mix of the 3 is awesome!), smoked 1 hr over very low (190 if possible) indirect smoke (apple/cherry/pecanwood for smoke).
Remove, cool.
Pit olives and put pieces into processor.
Add some onion/shallot, olive oil, pepper, salt, garlic (roasted if preferred) and hey, maybe some smoked plum tomato! yum!
Pulse til very small chunk/pieces.
Let flavors mingle in fridge 1 hr or more.
Use as a spread or a great stuffing for butterflied/rolled pork loin roast.

this one is so easy its stupid. ...[p]1 lb of crab meat (lump or backfin, sorted of any shell and finely shredded)
1 brick of cream cheese. .[p]use a fork to mush it all together and then form into a ball [p]thats it. .. its fantastic!!

Pretty common, but still good.....[p]Any cooked salmon. Add green onions to taste and cream cheese to the desired texture. Very good.

Chet, Ok. here's one from Ted Peters', one of the best places to eat on earth. [p]Smoked fish fo your choice. I like flounder, small grouper, and snapper's. Ted Peters uses mullet.[p]Sweet dill Cubes[p]Diced sweet onion. I smoke my onions w/my fish.[p]Black pepper[p]Mix all the above together to you liking, then slowly add Miracle Whip til it gets to the consistency that you want.[p]Top each bite with Tabasco.[p][p]
