    You could use a blacken seasoning and smoke it with some alder at 275 indirect until cooked through (moist, not too dry) - OR - blacken and go direct at 300 until cooked through and serve over a bed of the following:
    rice, black beans, corn, green onion and diced tomato (does tomato have and "e" or not??? Where's Dan Quale when you need him... LOL). The Mrs and the 8 year old (Mini Mrs - or is that Mini Ms) really like this one. Joe

    Halibut is such a versatile fillet, you can smoke, bake, fry, grill, any flavor or method, and the only way to ruin it is to over cook it. My favorite way to grill halibut starts with a packet of McCormick Grill Mates, Mesquite Flavor. Mix as directed and marinate fillets in a zip lock bag in the refrigerator for about 2 hours. Grill direct using a fish rack (about 300-325 dome temp) just enough to brown on each side (8-10 Min a side) Fish will be firm to the touch when done. The dripping marinade will create lots of smoke, but I like to toss in a few chunks of hickory.[p]

    Simply grilled, as has been stated, with a few shakes of your favorite cajun seasoning. I do direct in a basket/grill contraption, same temps/times you have been seeing (300 or so dome, 8-10 per side). My only difference is to serve on some nice sourdough or even a soft hoagie bun, with lettuce & all the trimmings. You can eve nmake your own 'chips' to go with your fish, provided you start them first. I use a ziplock bag to put some cut up potatoes in, add some olive oil, generously, plus whatever seasonings you care. They even make packets for these kinds of potatoes. I cook on a cast iron griddle in BGE first until about 3/4 done, 400 dome for about 40 minutes, mixing up once or twice. Makes a quick & tasty version of fish-n-chips. Have fun.

    I usually grill it w/ just S&P and then serve w/ a homemade mango salsa. Everyone raves about it!

    I usually brush with olive oil. sometimes even a garlic flavored olive oil and then sprinkle with spicy rub or even spicy Mrs. Dash. Grill . And as you probably know, Halibut is easy to overcook. But delicious when done right!
