Actually Want a Long Cook

I want to have pulled beef ready for 11AM in the morning and I would like the chuck roast to be put on before midnight so I can get good sleep before the big game the next day...

Since I am going with a 16lber chuck roast...I am thinking stick it on at 2PM the day before and foil when I wake up for the last two hours in the morning...put it in a hot cooler at 200deg and pull it 2 hours later...

Will that work?
