Iwould like to ask if those of you who are doing catering or parties,is there a program or formula that you guys use to assist in getting the portions right,the amount of meat and sides as well as how much to charge?Any help would be appreciated.

I've seen this question asked and answered on the BBQ Forum before. There a number of caterers there who hang out. You might try there if you don't get an answer here.

The Naked Whiz,[p]Good advice! Catering covers a lot of territory, from just providing a tray of whatever to "the full nine yards". Every addition (side dishes?, utensils, you serving?, etc.) brings a new set of calculations.[p]In VERY general terms, Gooba, figure a third pound of meat per person, and charge three to four times what your uncooked food costs.[p]Ken
