Wild Turkey ??

Sorry - Didn't mean to get yall all excited. I'm talking about the feathered kind not the liquid kind. A friend just gave me a frozen wild turkey. Never cooked one before - Any suggestions ??????

    I wrap them in bacon and very lightly (like only fresh lump and no wood chunks) smoke at 350, just like in an oven. I use a polder to get the temp just right.[p]Good luck and let us know the results[p]Banker John

    The wrapped-in-bacon approach is probably a good one. I did one last year, and even with brining, it was dry and tough. I would suggest brining for 24 hours, wrap in bacon and cook at 350 until breast is 165. With the bacon, smoking wood is redundant. The next time I get one to cook, I think I'll braise it like any other tough meat. Good luck.

    Memphis, i would probably do the super smoked buzzard recipe from the bge recipe section on this site. i have not done a wild turkey and am not sure what temp is best for one.typically for store bought, i pull when the breast is at 162 F. i would definately put liquid in the pan so that it smokes and steams. small amount of cherry wood or pecan.
