fat side up or down

doing 2 big butts tomorrow to take to new years ever party!

when cooking a a boston butt (pulled pork) - should I have the fat side up or fat side down! does it matter?

    Opinions vary widely.

    My opinion is it don't matter. I generally cut it off to have more bark.

    the butts i get dont have the fat layer, more bark and more rub sticking to meat ;)

    Hadn't heard that one before. Most seem to say, fat down. I've always done fat up. Fat in the trash can and more bark sounds like an excellent idea!! :) I WILL have to try that next time!

    I hate it when I go to the kitchen for food and all I find are ingredients!

    tried it both ways...no opinion...if you want more bark, cut it off...otherwise I kind of put them on the best way they will fit....I'm usually cooking 3+ at a time now and freezing the leftovers...they go great in the Apple Pie baked beans I pulled from a Thirdeye post.

    I have always gone fat down, that is if there is fat on the cut. I have always enjoyed more bark and usually trim as Fidel indicated.

    Agreed, I cut it all off too. Same thing with steaks, I trim all the fat off the outside, can't stand the texture of it.
