Folks-[p]I cooked some wonderful chicken breasts on the egg this weekend and I had a question I know you folks can help me with. I usually cook them at 325-350* for 45-55 minutes direct and half way through the cook I flip them. My question is should I start them skin side up or skin side down? I got a little bit of overly dark skin on them yesterday when I started them skin side down. I need to try some spatchcock chicken which I have read so much about but haven't gotten to yet.[p]Your professional opinions are greatly appreciated! Thanks again!

    I always start my chicken skin side up and cook it a little longer on that side than after I flip it. Usually 45 mins on the first side and 30 mins on the skin side.[p]Jim
