A mere 3 months ago, I had no Egg. This weekend I hung out with the best chef's and people you could ask for. Location, a 10. Weather, a 10. Instant buddies-10+! [p]I've never seen anything like this. I've never tasted food all day and still been hungry. What a top notch event for everyone involved. Thank you all from the Borders and Cutcliff families. Whoever did them do you have a recipe you care to share? Forgive me for not knowing, but so much of the time there was just someone who appeared and said "eat some of this" and it may or may not have been the person who actually cooked it, LOL![p]Tonia

    QBabe, I'll take credit for the Sweet Thai Chili Babybacks. The key was the sauce and I'll post that recipe. It worked out so good, and I still had 3 uncooked racks that were marinating, so I did 'em again last night.[p]I forgot to ask you about a picture on your website. You are grilling a bunch of fresh cayenne peppers. First of all, it's just a cool picture. Second, what were you doing with the peppers?[p]I'll email you all the pics.[p]Scott

    Borders,[p]Looking forward to the Thai sauce...[p]As far as the peppers go, I smoked them really low (maybe 200° or so on our pizza screens) to infuse some nice smoke flavor into them, and then I dehydrated them (I got one of the American Harvest deyhdrators for Christmas one year and often dry herbs). Once they were dehydrated them, I left them whole and stored them in the freezer until I wanted to use them, then just crunched them up and used them anywhere that a recipe called for cayenne pepper flakes or red pepper flakes. The smokey, roasted flavor that the egg gave them was FANTASTIC![p]Looking forward to the pics...I've got to find a way to get more than 24 hrs into a day for the next Florida Fest so I can find some free time to take a few of my own![p]Tonia

    What a great idea. You Louisiana Cookasses out there take note. That has got to add something to every dish that contains cayenne peppers (a staple in Louisiana). And the nice thing about it is that cayenne peppers make you live longer. Everybody knows that.[p]Spring Chicken

    Borders,[p]HA! After I explained that the blue tile belonged to my brother, and some other people were cooking on my large cooker, they let me off with only 6 months at Krystal.
    I can't take credit for those Super Burger Dogs and that excellent peach and blueberry cobbler/crisp.[p]Great time, Great food and even greater people.[p]BOB
