My first meatloaf

I tried meatloaf for the first time this weekend, and it turned out great. I started out by mixing about 2.5 lbs ground beef, 1 lb ground pork and three hot Italian sausages (removed from their casings). I mixed all of the meat together by hand and added one chopped yellow onion and one chopped red pepper. This looked like too much meat to work with (it barely fit in the mixing bowl). So I took a big hunk of the mixture out and formed two nice sized burger patties. Those went into the freezer for a future cook. [p]Then I added two eggs, about four cloves of minced garlic, one cup of bread crumbs (made from homemade sourdough bread), salt, black pepper, cumin, oregano and cayenne pepper (didn't measure any of the spices, just threw some in). I mixed all of this again, and formed it into a loaf. I put the loaf on a roasting rack over a drip pan and put that in the fridge for about 45 minutes (I would have done this longer if I had more time). I thought that letting it sit in the fridge would help keep it together, and it did.[p]I put it in the Egg at 250, with a couple of hickory chunks. I let it stay at 250 for about thirty minutes, then kicked it up to 300-350. I think it cooked for about 2.5 hours. I brushed barbecue sauce on the top for the last 20 minutes or so.[p]It turned out very spicy (almost overpowered by the hot sausage) and smokey. I haven't tried the leftovers yet, but I'll probably have some for lunch today. When I was buying the ground meat for it I saw packages of "meatloaf/meatball" meat for sale, which is a combination of ground beef, veal and pork. I might try that next time.[p]If I get tired of leftover meatloaf this week, I have a feeling it would work well in chili - it already has spicy meat, pepper and onions in it! And I'm looking forward to cooking myself a beef/pork burger one of these days.

Meatloaf on the egg is great. I always put mine in a loaf pan like I would the oven and put the pan on the grill. Pump in a lot of smoke and get a nice smoke ring. Slice that up with some bbq sauce and you've got great sandwiches!

I use olive oil in my pan, let the loaf set up overnight and then heat the egg,remove the loaf from the pan,cook indirect over a drip pan on the grill. Brush with Q sauce the last 20 to 30 min.[p]Regards,
