Platesetter and quick cooks

I was wondering last nite as I took off a batch of wings how many people use platesetters to cook chicken etc. I always seem to get too much char on my wings. Just wondering.

What temperature do you cook them at? Try a lower temp to see if that makes a difference.Large BGE

I like cooking them 400-450 with the platesetter but will go high in the dome if direct

I also go direct high in the domeSalado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Just given another Mini to add to the herd.

I cook my wings that way.

I use a platesetter 90% of the time. Some cooks are up in the dome as others have said.
Play with your temps and see if you can find a sweet spot.Molly
