Started stocks today. We do Christmas dinner on Boxing day (day after Christmas)
Roasted turkey and mirepoix

Stock starting to simmer

I will let this simmer til tomorrow morning, strain and cool. Gravy, and stuffing will use this as well as some soup and white bean and turkey chili.
