Christmas turkey

apologies in advance, i'm new to the board and havent yet reviewed the board for a duplicate thread.

i've smoked a turkey for the past 2 Christmas' with great results. i've used Mad Max but i didnt follow the recipe entirely (lazy, inexperienced, men dont need directions...take your pick). for example, i used a direct method @ 225 w breasts up...it cooked faster but didnt burn or dry out.

As i'm reviewing recipes for techniques and improvements, it strikes me that there are many different approaches (indirect, direct, vertical, with pan, w/o pan, etc).

Is there a consensus on the best method to smoke a turkey?

  • There are numerous methods and none are right or wrong. I personally believe meat that is low in fat and connective tissue should be cooked as quickly as possible to prevent drying out. I cook my turkey's just like you would in an oven and besides they cook faster then the package says, they are always moist and fantastic. On a side note I have over smoked turkey and it was bad. I no longer use any smoking wood with poultry and find the lump alone provides a nice mild smokey flavor.
