Mad Max ??
Attempting my 2nd mad max turkey, have a couple of questions, on my first attempt I stabilized the egg around 325 degrees for 45 mins. When I put the egg in, the temps dropped significantly, so at this point do you open all vents and try to get the egg back to temperature asap or ride out the storm and let temp come up gradually with the vents how they were when stabilized at 325?

No, leave things alone if the egg is stable.
Putting in furniture (plate setter and such), opening the dome, adding cold food will all drop the dome temperature.
The lump hasn't changed other than more air in from opening the dome.
Leave the vents alone the egg will recover to the previous stable temperature.
