All rubbed. One had Raising the Steaks on it.. haha
Had to cut it in half.
On line ready to carve!
Taste and texture was just like prime towards the middle. Melt in you mouth goodness!!

We would call that a hip of beef I think. They served it at our company Christmas party and I went down to maintenance at the hotel to borrow a tape measure to see if it would fit on an egg. :laugh:

Looks wonderful Molly, like Ross, I haven't seen a steamship roast in a long time. I can remember the first one I ever enjoyed, it was at a club in Ottawa Canada probably back in the 50's when I was a little sprout. LOL, I'm not that old, just have a very, very long memory and was very, very impressed. I love a great carving station.

I would have loved to Steve but as I recall we were pretty busy that trip skiing in The Laurentians. Unfortunately it was the only time I got to ski up there and I was to young to get turned loose and REALLY enjoy it. I love Canada and could live up there if it wasn't so damn cold!

the only time i've had a steamship is the only time i have been to colorado springs. it was back when i was in college at the lost valley ranch near sedalia. i don't remember much about it other than it was the biggest hunk of meat i'd ever seen.

I think that's really neat Molly, I grew up in New England and only had grays and little red squirrels. I always thought the black ones in Ottawa were cool. I'm a little surprised that you have them, I lived in Denver for a good part of one summer and never saw one. It is due to a genetic trait called melanism, an over abundance of the pigment melanin. Melanin is funny, the crystals viewed from one direction make a black squirrel black yet the same pigment viewed differently makes someones blue eyes blue. I think parts of Michigan have snow white squirrels.

The catorer served this at my daughters wedding last year. Couldn't believe how tasty and tender the meat was. Had to ask him what it was called.
