I've got a big ol 2lb rib eye roast at least 2.25" thick.[p]I am not sure what to do with this beast. Do I flame it but instead of my normal 3 mins a side and 3 minute dwell, go say 4.5 per side and a 4 minute dwell? Or would you all recomend some other method?[p]Got the Egg lit and the rib eye waiting for some of that good BGE forum advice.[p]Thanx in advance,
