Bill in VA,
Yes. A bone-in (blade) chuck roast would produce a bit more flavor, but any hunk of chuck roast works. I particularly like Dizzy Pig's Cowlick rub all over the roast, cook it indirect at 225-250 with some apple wood for smoke and take it off at 195. Makes great pulled beef that doesn't really need a sauce. Enjoy.

Marvin,
Hey I have been wondering about pulled beef for a while now too... is there a guideline (general) for how long at 225-250 a roast of a given size will take to reach 195 int? (i.e. like in a butt cook you can fiugre 2 to 2 1/5 hours per lb to get to 195 int).[p]Cheers[p]

Marvin,[p]How long does that take to get to 195?[p]Thanks,[p]Mick

Bill in VA,
I do pulled beef, low and slow with an English Chuck Roast. The results are great. I stick in the polder and low and slow it just like a pork butt. Great bark too. A big thank you to gfw for turning me onto this one.[p]Fireball

Long time-no see.
Good to see you back in the thick of things.
Hope all is well. Stop in more often.

Nardi,
It's a bit shorter; about 1 1/2 hr/lb.

MickeyT,
Mine average about 1 and 1/2 hrs/lb
