Saw this recipe on TV this AM and it dawned on me that back straps look a lot like flat iron steaks. I wonder if this recipe could be used with a flat iron instead. Kinda neat how instead of butterflying the meat, rolling it up and tying it, he took a filet knife and worked it through lengthwise and sliced a little laterally to make a pocket for stuffing. Looked awfully tasty. Here's the LINK
