Chivito - Cheese Steak from Uruguay

I saw a post about a sandwich from Uruguay called the Chivito last week and knew I just had to try it on the Egg. It was really simple and tasted wonderful. Kind of a cross between a cheesesteak and a burger.

I thinly sliced (1/4") the butt end of a beef tenderloin and seasoned it with just pepper and salt. Grilled it at 450f direct for 45 seconds...

Flipped and topped it with Canadian bacon and mozzarella, then let it go another 45 seconds...

I hit the toasted kaiser roll with a little cumin mayo and then topped the sandwich with bacon, lettuce, onion, and tomato. Served it with some sweet potato fries.

Quick, tasty, and easy. It's hard to beat that on a weeknight. No wonder it's one of the national dishes of Uruguay!

    Tell me about that grate you've got on your Egg. It looks unique, don't think I've ever seen one. What's the story?
  • It's a cast iron grate that I got earlier this week. This was my first cook on it but I plan to use it a lot this weekend!

    The neat thing is that the three sections can come out separately. They also have inserts for pizza stones and griddles but I'm just trying out the basic grate right now.

    It's my first cast iron and all I have been thinking about is what would be good on cast iron this weekend besides the obligatory steak.
