Enchilada sauce - makes 3 cups

2 T vegatable oil
2 T flour
2 T chili powder
1 t ground cumin
14 oz (1.5 cups) chicken broth
1 can (8oz) tomato sauce
1 t salt
1/4 t garlic powder
on medium heat
in a saucepan stir in oil, flour & chili powder. cook for 1 min
add remaining ingredients - bring to boil & then lower heat to simmer for 10min.

Chef Arnoldi,[p]Thanks for this post. I really like to make the pulled pork enchiladas recipe from Wise One's recipe book, and I usually have all the ingredients on hand but the enchilada sauce. Now I can whip that up as well! One modification to the recipe I make is that I use low-carb tortillas.[p]Chuck
